Having been let go from my job a while back, my finances had dwindled but my love of Asian restaurants certainly hadn't.
With the choice of giving up my beloved grub, or getting stuck in and learning to do it myself, I chose the latter. I've immersed myself in cooking ever since, frequenting the Asia Market regularly and making meals from scratch every night. Cooking is an absolute joy to me, and to have the chance to train as a chef at such a highly renowned school would be life changing.

This dish is Chicken Kashmiri with Saffron Rice. It's not something you see on the menu so often here, but it's exceptionally tasty. It's essentially a Korma, with pineapple blended in to give an additional natural sweetness. Made with: fried onions, liquidised chili, garlic and onions. Spices: Tumeric, Ground Coriander & Garam Masala. What gives the awesome flavor is the cashew nuts, pineapple and coconut milk blended to a silky paste. Garnished with lemon, coriander and almond flakes. Yum!
