At the moment cooking is my hobby but I don’t do it just to pass the time. I love cooking; I love trying new and different flavors, weird combinations and love taking what ever is in the fridge and seeing what I come up with. Sometimes it works! I would really love to have the technical ability to make every dish a success. Tender chicken breast stuffed with a well seasoned ricotta and spinach filling, then wrapped in fresh spinach leaves and poached in wine under tender. Cooking juices are reduced to form a delicate sauce. Crunchy breadcrumbs and parmesan topping provides an excellent contrast to the asparagus and courgettes mix and compliments the mild flavour of the ricotta. The blue potato and chestnut mushroom gratin gives a slight nutty flavour to the dish and isn’t too rich as it is cooked in milk and wine.
