After 25 years of being miserable in the corporate world, I discovered my passion was all things food. I decided to devote my time to working in the world of food. So far so good and I've never been happier! I would love to win Cheffactor and have the opportunity to hone my culinary skills at the world famous Ballymaloe Cookery School!!

Celebration Beef Fillet!
Not a dish for everyday: Pan Seared Fillet of Irish Beef marinated in rosemary infused olive oil and stuffed with Cashel blue and wrapped in Parma ham served atop roasted garlic and spring onion mashed potatoes and a port wine reduction.
A dish to be reserved for special occasions, Valentine's day, a special anniversary or birthday. It's a celebration of the best of Irish food! It's sure to please the most discriminating of palates!

Hey Nancy, I have been racking my brain trying to think of a birthday dish for my hubby. Chicken Cordon Bleu used to be for special occasions, not any more, so I was thinking Beef Wellington, nah. This will be his B-day dinner. Thank you.
