I love cooking & baking! Each week when I go to the supermarket I choose a brand new ingredient to challenge myself with even if I have to google on what to do with it. I began baking in 2008 after a series of health problems but whilst they challenge me now and again,I'm happiest in the kitchen with the Irish trad music on full blast and a big mixing bowl and ingredients in front of me! I would love an opportunity to learn some new skills, especially piping ones & how to cook perfect roast beef

This is my "Signature Dish", it's not just another carrot cake. The carrots are organically grown down the bottom of our garden and the flavour is just beautiful! I don't use an electric mixer at any time during the making of this cake as there are various little elements to the techniques I have created myself and it's a cake that I love to make! I particularly love to make a cake that has brandy and I have discovered that the Martell Brandy offers a deeper flavour with a fabulous soft frosting

Thanks for all the votes lads!! I need more votes!! Just think of this fabulous cake with carrots that started off as little seeds in pots now big orange carrots grated and added to the mix to make a gorgeous carrot cake with me fabulous rich creamy frosting!!
