I have been baking since I was a child. I am passionate about good food and have always fed my family (husband & 4 children) with fresh home cooked meals, and home made baked goodies. I have made Wedding & Celebration Cakes for friends and family for many years now, usually as gifts. I would love to take the Ballymaloe Culinary Course to gain certifaction in cooking & baking. My ultimate aim is to teach others the art of baking, because I love the 'alchemy' of the blending of ingredients.

The dish I am submitting is a very large apple pie which I made for the 19 members of a Business Course I am currently undertaking. We are required to make a presentation to the group, and I demonstrated how to make Short Crust Pastry, with the Apple Pie as 'here's one I made earlier'. It is made using a recipe from one of Rachel Allen's Cook books, which I have used together with Darina Allen's books for many year.

As one of the 19 students on the business course, I have tasted Barbara's baking - Divine!!! She really knows her stuff!! And she will make an amazing culinary teacher, she has such a lovely warm kind manner. She truly deserves to win. It is her life long dream.
