I have been dreaming of this course most of my adult life!
I'm happiest when cooking for loved ones, I love making game stews, risottos & biscuits, I find stock making completely satisfying! I love the changing seasons, and I hope one day to keep goats, chickens and bees!
I have a lot to learn, this life changing prize would give me the confidence, skill and knowledge that I have been longing to gain. I could finally create a viable, passionate career in food and a happy (and tasty) future!

Braised Oxtail with Borlotti Bean Soup for me is a hug in a bowl!
The oxtail is braised in red wine and homemade chicken stock with thyme, tomato puree, leeks, onions & celery.
The creamy bean soup is a comforting addition and makes it a hearty, wholesome supper for a cold winter evening. I add rocket for a fresh crunch along with a little squeeze of lemon and a shaving of parmesan.
This is a dish I love to make, love to eat, and Oxtail is under used in my opinion. Everybody grab a tail!

spent four hours today surfing the web (as you do), I'm a keen chef myself, when i came upon this page and started to look in depth at the contestants ( what else are sundays for ? ) ... another 2 hours later and i can safely say this is the dish that gets my vote. it's original without being pretentious, it's simple and sophisticated, and more than anything, it's the one i'm jealous i didn't come up with myself. i really hope this gets the judges attention, it has certainly caught mine. time to get off the computer now
