This incredible prize would be a dream come true. Doing the week long course in Ballymaloe nearly ten years ago created a passion for cooking and good quality food that has never left me.I've just started baking this yummy banana bread for a local coffee shop and the buzz I get from making it, knowing it will be enjoyed by others, is the best feeling ever and I am hooked.I would be so grateful to be given the opportunity to develop my skills in order to make cooking my full time career.

This bread is a family favourite and I love baking it. The ripest bananas, the plumpest blueberries and the crunchiest walnuts make this banana bread the ultimate comfort food. The comforting taste of cinnamon, also in the recipe, creates a scrumptious aroma when the bread comes out the oven. The bread remains moist and yummy for so long and if (on the v rare occasion!) there is any left after a few days it's delicious toasted with some butter.
