I am very passionate about cooking. I think about food 24/7! I love inviting friends to dinner parties, shopping for the right ingredients, planning the menu, to cooking and presenting an impressive dish. I too believe cooking is at its best when you use quality local or home-grown organic produce that are in season. Everything I know is self-taught, It would be a dream come true to have the opportunity to be taught professionally at Ballymaloe, and learn the food business Cully & Scully style
You have 500 characters to tell us about your dish:
At the base, a fusion of fresh Clonakility black pudding & local organic pork meat moulded & set into a large round shape, pan-seared & baked. On top, I pan fried a fresh scallop (from my local fishmonger) marinated in lemon infused butter. I set the scallop in a lemon foam, made from milk, lemon & crème fraiche. The scallop & foam is wrapped with grilled streaky smoked bacon. On the side, a sweet organic pear purée made from pears grown in my Dad’s garden & a dash of aged balsamic vinegar.
