Like everyone else who's entered Cully & Sully's Chef Factor, I love cooking. In fact, over the last number of years it has become my consuming passion. I regularly cook for family events and dinner parties and all I think about is when I'll have my next opportunity to cook for people! Frankly, I'm at a loss for words to describe what getting a chance to attend the Ballymaloe Cookery Course would mean to me. I think it would be the perfect recipe for my personal success.

You have 500 characters to tell us about your dish:

My dish consists of pancetta rings stuffed with a feta and basil mix and topped with grilled garlic prawns. To get the pancetta ring effect, wrap the pancetta around a thick sliced carrot and pin it together with a toothpick. When the pancetta is cooked, slip them off the carrots and stuff them with the feta. Fry up the whole prawns till a lovely pink colour, place the in the centre of the pancetta ring. To finish, simply garnish it with a little basil and serve. Tasty!
