I love food :-) buying it, cooking it, eating it! Over the last 2 years I have developed a special interest in making cakes for special occasions for friends and family. It comes from watching my mam making spectacular birthday cakes when we were little. So much care and love goes into the design and making sure it tastes good too! So what better present for my friends wedding than a cake, and it was my first one ever. I would love to hone my cake skills by winning a place in Ballymaloe xxx

The instructions were "no fruit cake, no icing, no marzipan"!! So I went with chocolate - First tier, moist dark chocolate cake using 70% dark chocolate and filled with white chocolate and Madagascan vanilla ganache, 2nd tier zingy lemon sponge made with organic lemon zest and filled with lemon curd buttercream, top tier chocolate coca cola fudge cake. All wrapped with Belgian chocolate paste, and tempered 70& dark chocolate, covered with white chocolate curls.
