I have always had a great interest in food and enjoy cooking family and occasions. I have come to a crossroads in my life as due to the current economic climate my rural pub business is gone. As food is my passion I would love to learn new skills and develop my knowledge of cooking. I am comfortable cooking for a party of 10 or so but I would love to develop my skill to pofessional/restaurant level. Winning this and going to Ballymaloe cookery school will give me the new start I need.
You have 500 characters to tell us about your dish:
I devekoped my dish using where possible seasonal, homegrown ingredients. I started my dish with a creamy potato, parsnip and parmesan mash, which I felt would compliment the pork nicely. The Kilkenny fillet of pork is filled with apricot, hazelnut and apple stuffing, and served with a white wine and taragon cream. I decided to finish with sauted butternut squash to give a halloween twist to the dish. I then plated the dish on a balsamic reduction.
