My passion is so strong for cooking I have left a great career in nursing to follow my dream! I am studying part-time in CIT for one year and working voluntary in a restaurant to gain experience. I feel this would give me the opportunity to complete my studies and make great contacts. I've been nursing since 17 and I'm a Mom of two, I've taken a huge personal, financial and professional risk…. this would make all of it worthwhile!
You have 500 characters to tell us about your dish:
It's an homage to our sea! Ireland is blessed with some of the finest fish to offer. This is just to showcase some of the delicacies, everything locally sourced.
The scallops are lightly browned and served on a bed of mint pea puree (peas, garlic mint and sour cream). The mussels are cooked in white wine, pinch of chili and a hint of ginger. The smoked salmon is on a bed of potatoes, avocado and bean sprout salad.
Yum! ;-)

Sound like you really have choosen this as a career for yourself having given up nursing to do a course in CIT. I hope the judges will appreciate that and offer you the third place in the final. It would be nice if the prize went to someone who will use the cookery experience in their working life.
