I've been cooking seriously for three years now and the more time I spend at it, the more I love it. It's just so creative and fulfilling. I cook whenever I have time out from schoolwork and homework(sometimes putting them off to make time to cook!) I'm hoping to do the Ballymaloe course when I finish school but if I could win the chance to go there it would be all the sweeter!

I do variations on these tarlets a lot, changing the fillings and the shape but this is probably the most unusual combination. People probably expect apple and walnut tartlets to be sweet but with an onion base and a smattering of cheddar cheese on top these make a really delicious savoury dish.

wow, pastry is a tough one

wow, pastry is a tough one to get right but you look like you have it spot on here! Sweetness can really bring out the lovely qualities of cheese! Sounds devine coupled with walnuts. The very best of luck! You've got my vote
