I've been cooking seriously for three years now and the more time I spend at it, the more I love it. It's just so creative and fulfilling. I cook whenever I have time out from schoolwork and homework(sometimes putting them off to make time to cook!) I'm hoping to do the Ballymaloe course when I finish school but if I could win the chance to go there it would be all the sweeter!

I do variations on these tarlets a lot, changing the fillings and the shape but this is probably the most unusual combination. People probably expect apple and walnut tartlets to be sweet but with an onion base and a smattering of cheddar cheese on top these make a really delicious savoury dish.

I love the idea of apple and walnut with cheese and onion - you need great imagination for great combinations. Sounds so good I can smell it and taste it from here!
