4 years ago i didn't realise i could cook, i never really had to, i didn't do it at home or school. I loved dining out and trying unusual foods but since i've had my daughter and moved out on my own i've realised how much i love cooking and now its all i think about.Friends and family have said i have a natural flair for it. I hope to study culinary arts in the near future but to win a coveted space on a ballymaloe course would be an amazing opportunity that i never would have believed possible.

My dish is a seared and then roasted pork tenderloin with bacon, mushroom, onion, parsley and thyme stuffing, mashed potato, wholegrain mustard and a cider cream sauce with sauteed red cabbage, pecans, apple and red onion, garnished with roast carrot, parsnip and pecan nut chips. This to me is the ultimate cold weather comfort food and always goes down well with friends. I used seasonal fresh veg and local produce.

Sounds like a delicious recipe really unique and very healthy. Love the way she garnished it with peacan nuts and the red and appleunion with cider sauce sunds mouth watering great dish for halloween has all the colours of Autume

wow, thanks for the lovely comments, i was a bit worried the picture wasn't doing it any justice and i was starting to lose faith in myself but it really does taste lovely. The roast pecans being my favourite bit.
