I should win Chef factor because I believe I have what it takes to be a top chef. After years of pursuing different careers and going back to college to study electronics, I have realised the path I should have taken is cooking. I have been doing it for years and have always been complimented on my food.For my daughter's confirmation I catered for over 25 people 2 starters choice of 3 mains and various desserts, everybody enjoyed.I enjoy making people happy with my food and am eager to learn.

My dish is Scoddle and it has evolved over the years, it is a mix of stew and coddle. When making stew for my own children I began adding sausages and other extras and they love it, their friends have commented on how odd they think it is to have sausages in stew but when they taste it they also love it. The ingredients are beef,sausages,carrot,celery,parsnip,onion,peas,red wine, herbs,tinned tomatoes,turnip & garlic.I serve with baby potatoes and some crusty bread to mop up the luscious juices.

I am a huge fan of coddle and stew, lol I cant wait to try this dish
Great way to get loads of vege into the kids too and keep them healthy in Winter, my kids and all their friends love it and dont even notice they are eating turnip and parsnip which they never eat on their own.

Ahhhhhhhhhhhh yes Coddle anytime for me its a real winner
I was born in Cobh and we moved to Dublin when I was four, I moved back to cork in 1999. I remember all my friend's Ma's in Dublin making coddle on a Thursday to use up all the sausages and rashers cause we were not to eat meat on Friday Friday was Fish only day. My "Scoddle" is a mix of stew and coddle whcih I have perfected over the years by adding different ingredients, my kids love it, they wont eat parsnip or turnip on their own but will eat them in my Scoddle and they are always fighting for the last sausage, their friends are always happy when they call on a Scoddle day, I make a big pot and there is always plenty to go around.

Anita here, in my previous comment on the coddle story I said I moved back to Cork in 1999, however with all the excitement and trying to get votes I have only just realised this mistake, I moved back to Cork in 1990, sorry guys xx

Not only does she keep her own lot (family of 7)full of goodness with her amazing cooking but she quite often dishes out her culinary delights to her neighbours, friends, friends of friends... basically if you look hungry and in need of some tlc and a good feed Anita will be there to help. A lot of my family is from Ireland...I am newly married & was looking for some great meals to add to my recipe book. When I wondered upon Scoddle I immediately want to add it to the book!! We have a big family and with the winter approaching I look forward to this hearty meal with the addition of sausage that I know the kids & my husband will love!
