If I could do it all again I'd train to be a chef.I love healthy, hearty food&want to bring it to the masses. My dream is to own a number of restaurants and to achieve this I want to begin my CULLYnary quest at Ballymaloe, where I'll learn from the best and gain the skills I need to become the Irish Jamie Oliver-educating the country on quality foods, organic grows and healthy eating all the while paying homage to Cully & Sully for affording me possibly the greatest opportunity I could ever get

This is a hearty dish that packs a healthy punch. It's light on the tummy, full of protein, and has a nice mix of veg and carbs to ensure a balanced diet-it's quite tasty too! Boil the rice halfway while chopping scallions, chillies and parsley. Drain and transfer to an oven dish. Combine with coconut milk, lemon juice, chopped veg, lemon zest and soy sauce. Bake for 20 mins and serve with chicken. Chicken is marinated in homemade lemon&herb aioli for 4 hours and grilled on the barbie. Enjoy
