Cooking and baking are my passions, they are what i truly love to do. After a long stressful day at work(I'm a secondary school teacher), the ultimate unwind for me is baking, everything about it relaxes me. Winning this 3 month cooking course in Ballymaloe cookery school would not only immensely improve my cooking skills but it would also allow me the opportunity to learn from some of the best cookery teachers Ireland has to offer. This really would fulfill one of my life's ambitions.
You have 500 characters to tell us about your dish: 
My dish is white chocolate and raspberry tartlet's. I have used a sweet shortcrust pastry for the base, the white chocolate filling is luxuriously smooth and has been given a hint of lightness by using whisked egg whites in the mixture. it was briefly baked and allowed to chill in the fridge over night. The tartlet's are topped with fresh raspberries, who's sharpness complements the vanilla sweetness of the chocolate. The tartlet is dusted with icing sugar and served with fresh cream.
