I love to cook and love to experience and blend flavors and there is always more to learn. My mother thought me a lot of cooking but as she's a vegetarian, I never really learned to cook meat so I need to learn more about meat. I also want to learn more basic concepts and more exotic recipes that will help me be more creative. Cooking is all about sharing food, techniques and having a good time. My dream is to open a restaurant and the Ballymaloe course would help me gain confidence for this.

This dish is made of simple ingredients but it's full of flavors. The chicken filling: parmesan, thyme and lemon rind gives a refreshing taste to the richness of the parma ham. This dish shows how cooking from different areas can nicely come together: the chicken, parma ham and parmesan are of course italian inspired, quinoa comes from South America and the carrot & parsnip mash (whith nutmeg & parsley) represents easy and tasty Irish food. It's an international and very well balanced dish.
