I feel happiest either in the kitchen or by the BBQ.I have always loved cooking. Although I cook every day at home, I've never had the chance to learn the techniques and skills needed to take my cooking to the next level. Nothing makes me happier than cooking up a feast for friends, thriving under the pressure involved to dish up on time. I believe, after doing a job for the last 21 years that i didnt enjoy, eventually ending up unemployed, that this could be a life changing opportunity for me.
You have 500 characters to tell us about your dish: 
This really is a family affair, from the start everyone is involved. We head off to the beach to collect Razor fish,mussels & clams.Some fish is brought like the red mullet and tiger prawns. We have Sea Bass that I caught on the local beach yesterday.I cut the fish into similar size pieces. A base of tomatoes,basil & garlic is simmered until the flavours have nicely infused.All the fish is added & slowly poached in the tomatoes. Once the fish is cooked,I serve with a big chunk of fresh bread.YUM
