I am passionate about nutritious homecooked food.Although I am always happiest knee-deep in flour,it didnt occur to me until my late twenties that I could cook for a living.I have 3 children,the youngest being 6 months,so life has gotten slightly in the way of my plans to own the classiest & most importantly,tastiest bakery/coffee shop ever.Win or lose I will do it,but winning Cheffactor means my shop will have the Ballymaloe touch and that can only be described as...the icing on my cupcakes!!!

My Manhattan Roulade is a light chocolaty sponge filled with white chocolate & coffee liqueur butter icing,sprinkled with white & dark chocolate swirls.For me using good quality ingredients is paramount.With all my cooking I only use fresh free range eggs from my own hens.In the case of this dish I used my free range eggs,the best quality chocolate & real Irish butter.A dish so classy it's an essential ingredient to nights in with the girls watching re-runs of Sex and the City!
