Last night I went out for dinner. The flavours and presentation were wonderful and I would dearly love to learn to produce that kind of food. I come from a long line of great cooks. My mother was truly talented in the kitchen and she passed on her knowledge and flair to me and my siblings. We are so absorbed in food that as we stand up from one meal we start to plan the next one! My friends always compliment my food and I would love to know if I have what it takes to be a good chef.

My meal is pan fried chicken breast served with basil mashed potatoes and a roasted red pepper sauce. The chicken is seasoned and then gently fried in butter and olive oil and the potatoes are whipped with cream, butter, salt pepper and fresh basil to give a lovely subtle flavour that works well with the roasted red pepper sauce which also includes shallots, tomato puree, white wine, chives, creme fraise and seasoning to produce a lovely creamy sauce. I hope you like it.
