As a child, strange things I would eat,Grapes, olives & definitely no meat! Teenage years were marmite on toast, Sneaky McDonald's but still no roast :( A spark of rebellion from my student self, Saw sausages, bacon & stuff off the shelf! With gay abandon I left my veggie life behind, Gobbling burgers & steak, any meat I could find! Far off countries have shown me new things, Now it's time to spread my culinary wings. Where will you go? What could that be? Why it's Ballymaloe with Cully & Sully!

I worked in a restaurant in San Francisco on my J1, when I had my first encounter with a nut crusted fish! It was something I hadn't tasted before but I've been experimenting with it ever since! Here I have used rainbow trout strips, dipped in egg & rolled in a mixture of crushed pistachios, hazel nuts, lemon zest & breadcrumbs then deep fried in olive oil. The mixed leaf, olive & cherry tomato salad has a fresh mint & garlic dressing & what fish can be served without a portion of chunky chips!?

Even my son Alex, who is not a fish lover, will love these! They are seriously delicious. Easy to make. Perfect party food for the holidays for my many peshitarian friends.
