This dish was inspired through my Moms great knowledge of seafood from when she worked in a well known hotel in Ballycotton back in the 1970s. It consists of fresh Salmon, Hake and Dublin Bay prawns all wrapped in a fillet of Lemon Sole, and poached in fresh cream accompanied with simple mash. With my absolute love of seafood I decided it was a must on entry of this competition.

Ballymaloe has always been in my life. From watching my moms floury hands rustle through one of Darina's cookbooks to driving through the beautiful surroundings imagining what it would be like to be in attendance at the fine school of cookery. I think I should win this competition because I'm a young enthusiastic girl with a natural flair for good cooking and I'm hungry to learn more. I want driving through Ballmaloe's gates, wishing, to be something of the past. I want my dream to come through.

That dish really appeals to me for its use of lovely fresh seafood beautifully but very simply cooked. Cant wait to get the ingredients and cook it. Simply delicious.
