Mike's pork package is all about the big juicy chunk of pork fillet fresh from the local butchers. This is marinated in a homemade Asian BBQ sauce before being quickly sealed in a hot pan. I then let the fillet rest while blanching some baby spinach and rolling out some filo pastry. Next the filo is covered in a layer of spinach before placing the fillet on top and rolling into a neat package sealed with melted butter. I bake in the oven covering in a layer of BBQ sauce 5 minutes before finish.
