From an early age from growing up on a farm I have had a keen interest in food and cooking. I studied nutrition and food technology in college. I have entered this competition to be able to cook healthy, nutritious meals. Also to educate people on the benefits of locally produced food. I have experienced and half days cooking at Ballymaloe and would love the opportunity to further enhance my skills at the world famous cookery school.
You have 500 characters to tell us about your dish: 
I have chosen a fish pie as fish is a food for the brain with all those omega-3-fatty acids which our bodies cannot produce. This pie is simple, tasty and delicious. It is the ultimate comfort food.In the pie filling there is celery, leek, carrot, brocoli, garlic, fresh herbs (basil & tarragon). Vegetables and fish mix are cooked in white wine, cream and fish stock. For the topping breadcrumbs, oatlets, grated lemon zest, grated Parmasan are added to melted butter. Cook for 25mins at 180oC.
