In the last few year's my passion for cooking has grown more and more. I am obsessed I love watching cooking programmes and reading recipe books. I love cooking meals for my family and friends, my mam did a course in Ballymaloe in the past and learned so much from the experience.It would be a dream come true to even step foot into the wonderful cookery school and learn from the best people in the business. Cooking plays such a big part in my life and I would be so grateful for this opportunity.
You have 500 characters to tell us about your dish:
My dish is inspired by my love of tasty but simple dishes, my fiancee is a fish monger so I am very lucky to be able to experiment with different types of fish. In this dish I have used sea bass wrapped in parma ham, baked in the oven with a nob of butter, lemon, parsley and sage leaves it is served with asparagus and baby potatoes. The contrast of the sea bass and parma ham is lovely,whilst in the oven all the ingredients infuse wonderfully together. It would be my idea of comfort food.
