I first started cooking on trawlers at the age of 17 and developed a love for the job.When I finally came ashore,Iconfined my cooking to the family meals. Now with the kids grown and gone,I still cook for my wife. If I was to win this competition, I'd use some of the skills learned at Ballymaloe to produce a series of Youtube videos aimed at helping lads who've just left home cook good inexpensive food and impress girls at the same time!I'd also like to cook for a living again.
You have 500 characters to tell us about your dish:
With only two of us to eat the Sunday roast chicken,there is usually a breast and thigh left over, so I came up with this recipe for Monday's dinner, although raw chicken works well too.Fry the chicken till brown. Place in dish with sliced green & yellow peppers, chopped firey green chilli and the zest& juice of a lemon and a lime. Cover and cook in the oven. Deep fry some parboiled spuds and cover with chopped garlic & garlic pepper. crisp under the grill for a short while.

Joe is not only a fabulous cook when it comes to conventional food but he excels at making meals for people with special dietary needs. I was vegetarian for many years and also gluten intolerant. Whenever I visit he always makes something special for me. Once he made me savoury rice that was second to none. Joe makes a simple dish taste gourmet! Best of luck in the competition Joe! You deserve to win.
