My lifelong passion for food has been strongly influenced by my Puerto Rican grandmother and my multicultural upbringing. When I travel,I'm forever taking notes of foodie businesses & ideas that could work at home in Ireland. I often try to recreate dishes Ive enjoyed for family & friends! We've so much incredible produce in Ireland that goes unnoticed and so much potential for culinary creativity.Fulfilling my dream of attending Ballymaloe would give me the skills to turn my ideas into reality!

This healthy Mango Monkfish is a fun mix of flavours reflecting my Puerto Rican heritage. Its one of my favourite creations! The fish is seasoned with Caribbean spices and coated with a beautiful mix of mild curry powder & coconut flakes. I seared it lightly on the pan and placed it in the oven for added crispiness. The hot, sweet salsa is made with scotch bonnet peppers, mango, pineapple & coriander. Sprinkle some quinoa on the side, kick back and imagine you’re by the beach...delicioso!
