As long as i can remember i have wanted to work with food.I know everyone will say that but I really have.With the financial commitment and the commitment to my college degree,Ballymaloe course has been something I wished to do at some stage in the future.With my interest being primarily in street food,I have found no course quite like Ballymaloe anywhere.Ballymaloe would give me the basis and much more that I would need to achieve what I hope to with food. thesoulotraveller.wordpress.com/
You have 500 characters to tell us about your dish: 
The dish is basically fresh fish marinated in citrus juices.I found oysters, Seabass, Squid and Black Clams to be the best with the black clams adding a rich black/blue colour to the dish. The squid must be fried off slightly before hand and the Corbinas marinated for an hour or so. I just add the essential red onion, green pepper and coriander salsa, a fraction of garlic, chilli, passion fruit and garnish with half popped corn. Of course, an over generous squeezing of lime over everything!
