As a child I was the pickiest eater and I can't understand how this was every true as I will taste anything now!Growing up on a farm instilled a passion for high quality,fresh produce.My dream is to open a shop and restaurant that prides itself upon sourcing its food locally.I want to create equally tasty food that everyone can enjoy, particularly those that suffer from food allergies as I am myself a coeliac.I love to travel and this is evident in my food with influences from all over the world

Irish fillet steak from my home farm (hung for 28days) lightly brushed in a Argentinian Style Chimchurri sauce: olive oil, parsley, coriander, garlic, paprika, pinch of cayenne pepper, lime juice, salt and pepper. Served with sweet potato oven roasted chips, with a sprinkle of nutmeg. Plus a side salad of wild rocket, spinach, roasted peppers and red onions. A little extra chimchurri sauce for dipping!!!
All greens and herbs I grew myself and all other produce is from the Galway farmers market
