Having spent the last year in Canada working as a Line Cook, I realised that I would love to become a professional Chef. I had planned on undertaking an apprenticeship in Canada but I was unable to renew my Visa and had to return to Ireland. I have always had an interest in cooking and I think now is the perfect time to pursue a career in cooking. I believe that I have the potential to be a very good Chef and I just need an opportunity like this to launch myself into the profession.

Even though this is very much a French dish, I think it boasts the best of Irish foods. Irish steak and potatoes are renowned for their quality and flavour. The frites are homemade and oven cooked. The steak is sealed on a griddle pan and finished in the oven. Cooks in oven for approximately 12 minutes and rests for 6. The Bearnaise uses half smooth and half grainy Dijon mustard. A dry white Sauvignon Blanc (from France), tarragon and parsley are used to make the reduction for the Bearnaise.
