We have a smallholding with hens, pigs and grow our own fruit and veg. As we also have two sets of twins (10 & 4 years)the kitchen is always busy to keep four boys well fed. They love to come home to the smell of cooking & baking. I already have the best of produce but would love to train to use it to it's best.'Forgotten skills' is in constant use in my kitchen - for me this would be a dream opportunity. This is a slice of the tart I made for dinner last night to use leeks and spinach harvested from our garden over the weekend. It is a rich shortcrust case (baked blind), with a filling of sauteed garlic, leeks and spinach bound with egg & cream and with a topping of crumbled feta, sliced black olives and grated mature cheddar. Served with baby rocket, also from our garden served with a homemade honey, vinegar & mustard vinegarette. On the side is Ballymaloe brown bread & spiced tomato chutney.
