Duck with beetroot and gratin patato

I think I should win Cheffactor because I believe that winning this compitition would be the kick start that I need to get to do something I love for a living. I cook nearly every day of the week and love to try new recipes . Getting to train in Ballymaloe Cookery School would be a great experience and help me on my way to starting new career.
You have 500 characters to tell us about your dish: 
So my dad has some beetroot grownig in his little veggy patch in his garden so having never cooked with beetroot before I said Id give it a go . So looked up a few cookery books and found a recipe of duck and beetroot . The duck was pan fried and surved on top of some red cabbage that Id cooked in the pan after the duck . I cooked the beetroot in the oven for an hour then cut into cubes and then fried them in the pan with some balsamic and butter On the side was a potato and swede gratin.
