I love food and cooking. It’s a passion. I have worked in restaurants since 1983. I started out as a waiter and worked my way up to floor manager. I came to Ireland to help a friend open his restaurant. I opened my own a few years ago but my lack of training and business experience meant we closed after a year. I am 50 and not working but as my daughter says ‘never give up Dad’, I would love to try again. The right training means a second chance to make my dream real and my family proud.
You have 500 characters to tell us about your dish: 
I learned how to make tiramisu many years ago. My wife won’t order tiramisu as dessert when we are out as she says it would only disappointment compared to mine. I am always asked to make it for family and friends for parties and special occasions. It is classic recipe, egg yolks mixed with caster sugar, add mascarpone cheese and cream, then fold in egg whites. Layer this creamy mix with sponge fingers which have been dipped in espresso coffee, top with a dusting of cocoa powder.
