I think about food all the time, I love to cook and to feed people, nobody leaves my house hungry. This brings me nicely to why I think I should win. I consider myself a passable home cook and need the wonderful Ballymaloe course to take my cooking to the next stage. There are some things that are really difficult to learn -I'm thinking pastry for one- without being shown first by the experts first.

It's difficult to see the dish in the photo because I had to feature my main egg supplier as well but it looks great. This version features yellow courgette and courgette flowers with chorizo. Carbonara's a real lunchtime staple with me, it can have chorizo, streaky bacon or leftover ham and whatever veg is in the garden, broad beans, peas, at the moment it's courgettes. My hens egg yolks and the oil from the chorizo give the sauce a beautiful rich colour but you'll have to trust me on that.
