To me food is everything! From the moment I wake every morning I think about food. I even sleep and dream about it. Since a young age i've enjoyed the pleasures of being in the kitchen. Food brings people together and this to me is one of the most beautiful things about it. Nothing makes me happier than seeing that mmm expression on my friends and families faces when they taste my cooking! To win this would mean a lot to me. I think it would set me on track to live my dream and share my passion.
You have 500 characters to tell us about your dish:
The dish I have created is Laksa. I was thought to make this dish when traveling and have yet to find someone who hasn't fallen in love with it. Getting a good balance in the paste is key. To me ginger, garlic, chili, lime, shallots and macadamia nuts are the important flavors. Then I coat some fresh prawns and veg in the paste before adding coconut milk and a good stock! Then garnish with bean sprouts, rice noddles, cucumber, coriader and lime juice to taste. A spicy yet fresh comfort dish :)

In fact Claire's cooking has been known to bring a comfort to many people. I love calling into see Claire, and being treated to the most fantastic cuisine, her cooking really is a treat for the taste buds.

Claire has the food passion and is a constant hostess dreaming up soirees and gatherings at the drop of a hat to allow her get in the kitchen
Her Laska is dreamy food and I can't wait to have a taste of what she concocts after a Ballymaloe sojourn
just thinking about it is making me hungry she is defo the hostess with the mostest u always know ur not going to leave her house hungry or disappointed

Claire knows how to throw a dinner party. She makes sure every detail is perfect. Getting an invite is the highlight of a winter week round here, really gives you something to look forward to. If winning this would open up that oppertunity to a wider audience then that can only be a very good thing!
