I'm an American girl living in Dublin. I'm engaged to a lovely Irish guy and we have a beautiful baby girl. I'm an amateur chef who has always adored creating inventive dishes, much due to the women in my family, all fantastic cooks! I have always yearned to learn more about every aspect of food. Since I've moved Ireland and learned about Ballymaloe, it has been a dream of mine to pursue the cookery course. I couldn't picture a better place to pursue my passion!

This indulgent, sinfully delicious dessert was created one evening with some leftover croissants and three types of chocolate. Flaky, buttery croissants are tossed with milk, dark and white chocolates, then baked in a creamy custard with a hint of cinnamon, which adds a dimension of warmth. Served warm with a gorgeous vanilla sauce spiked with whiskey, it's the ideal splurge! Friends have described this dish as "a delicious and dangerous calorie bomb", but it's oh-so-worth it!
