I would love to spend 12 weeks in Ballymaloe!Developing greater skill offering me an opportunity to follow my passion in a cooking career.I didn't have the most conventional of eduction (I wouldn't go to school).Growing up on a organic farm we had a mix of animals for milk,eggs and meat,we also grew vegetables on a commercial basis.Meals were always varied with meat in moderation,veg,salad,tarts,quiches,etc..(My mom is a great cook,my first teacher)This would be the chance of a lifetime for me.
You have 500 characters to tell us about your dish: 
My Beetroot and Haikido Pumpkin tart with hazelnut crust,locally sourced in season produce,(apart from the hazelnuts)I've used a local Killeen farmhouse goats cheese,our own hen eggs,red onion and rosemary from the garden.The combination of ingredients were to bring together the different flavours to harmonize in a hearty autumnal dish.My objective is to satisfy meat eaters without meat,I think I achieved that and had a lot of fun.
