Hi Cully & Sully, I should win this competition because it is meant to be!
I have a very strong Peruvian culinary background (how is this? well: mix Spanish food with Incas food plus a bit of Chinese,Japanese and Africans,and you get the culinary culture that right now is growing as one of the best in the world) , that makes me special and different from the rest,and I am sure this is what Irish are looking for in a dinner experience.

My dish is a classic Peruvian called TACU TACU, this was created by the African slaves from the Peruvian coast long time ago.It consist of a mix of specially cooked beans and rice.Fried all together until you get a crusty surface. This delicious dish is the base for so many variations and can be accompanied with fish, sea fruit,beef...you name it!
