I've always enjoyed baking and cooking, while I may not be the greatest cook in the world I put my heart into everthing I make, disaster or not! I also love to feed people which I'm told is a family trait. My cooking is really something I would love to take further than just home baking. I would be extremely grateful for the opportunity to learn from the greats at Ballymaloe.

My carrot cake is one of those great recipes that always comes out right. It's light and moist and the cream cheese icing really makes the whole cake (full fat of course!). I've converted people who wouldn't even think of eating carrot cake before with this recipe. It's a really great cake that although simple is always a pleaser.
