
Today I made Ballymaloe Praline Ice-cream. Start off making a vanilla ice-cream using the bomb e technique, which is basically whisking egg yolks, making a syrup of sugar & water & mixing them together. Then whisking up some cream and adding that with some vanilla extract. Frezze - Make praline. Carmelise sugar & nuts (I roasted & skinned hazelnuts) - Chill. Whizz in a magimix & add to almost frozen ice-cream. Freeze again.
I also made egg mayonnaise. Not the normal slapping Hellmans on a boiled egg. Boiled the eggs in salted water, ran cold water over them & left to cool. Peeled them & cut them in half. Scooped out the yolk & sieved it. Made homemade mayonnaise - mixed with the yolks & come chives & piped back into the egg white. Dressed with chervil & chives.
Next I made some buttermilk pancakes - it being pancake Tuesday & all. Everyone in my kitchen got one, which was a nice treat!
Finally I made a Pea & Coriander soup. Really quick & simple. Sweated onion, chilli & garlic, added peas & stock - seasoned & added coriander. Liquidised. Yum!
