Today we had a day with Blathnaid Bergin, Director: School of Restaurant & Kitchen Management Ltd & Director: The Restaurant Advisor.
We went through things like the importance of starting your menu before you even set up your kitchen, Very wise decision but something I had never considered.
We also went through different systems that can be put in place to keep track of everything in your food business & how each process should be done.
We looked at some case study's and gave suggestions of what could be done in this food business to help them run a more efficient business. The key to most of this comes down to planning & research.
Very interesting day that has made most of us think differently about our future business ventures!

Hi Christine - just wanted to say "hi" and that I've been enjoying reading your blog (short and to the point).
I entered the Cheffactor competition myself and while not making it to the short list, I did enjoy the night out at Ballymaloe House.
Hope you get open your Cafe as I believe that is what you hope to do after your course, so best of luck for the future.

Id say it will be a long time before I open a cafe, since starting the course Ive realised how hard its gona be and how I could benefit from a lot more experience before I attempt to start anything myself.
