
Busy day today - on top of my normal stuff I had some duties: make Lemonade, yum - clean the weighing up area, not fun!
So first I made the lemonade to get it out of the way. Melt sugar in water to make a syrup, juice lemons and mix it together with more water.
Next I got my ingredients together for Rabbit with mustard & sage leaves. I had to joint the rabbit was awful, his little head was still attached and I had to pull all his organs out - ill never make a butcher. I marinaded the meat in mustard, wine & sage for an hour.
Meanwhile I tried to salvage one of my loaves of sourdough. I had left 2 of them rise for too long and they sank so I baked one to see what happened and attempted to fix the other by knocking the air out of it again & kneading it again - its still rising now! The one I baked was a bit flat & doughy but looked good.
I then boiled some potatoes for Ulster Champ. Mashed spuds with peas, milk, parsley & butter. Very tasty indeed.
Back to my rabbit, dried it off and browned lightly then into a casserole dish with the rest of the marinade & some onions. To make the sauce I took the rabbit out of the dish and added creme fraiche and thickened with roux. My teacher was delighted with this dish.
