
Friday...yay!
So every evening after demo we are given a list of things that have to be cooked the next day. Its up to you & your partner to organise who is doing what. So this morning both of us turned up thinking the other person was making the Orange & Mint Jelly. Anyhoo I had to do it and because it needed time to set I had to start it straight away, which delayed my whole day! Boo hoo!
First I had a mini freak out, then I started into segmenting the oranges. A time consuming & awkward task especially when your still a little peeved. Squeezed juice from a lemon, made a syrup, soaked the gelatine in some water for a min - threw it all together and poured it into some lovely glasses & chilled in the fridge.
Then on to my white yeast bread - put my yeast in some water to get all spongy. Sifted flour, added salt & sugar and rubbed in butter. Mixed the yeast with the flour mix & some more water. Mixed to a loose dough then left to rest for 5 mins. Kneaded my dough for 10 mins then covered with a towel & left to rest in the warm press for 1 1/2 hours.
On to my scallops with beurre blanc. I chopped some shallots added some wine & vinegar to the pan and reduced. Left it to be made as late as possible.
I removed the scallops from their shells and prepared them for frying. They're all slimey & horrible and still alive, weird.
Next I made a sauce for my jelly - freshly squeezed orange juice with a little castor sugar to take out the bitterness and some chopped mint.
Back to my bread. Knocked it back (punched it to get the air out!) then kneaded again for 30 mins, then shaped it into a plait & some little rolls. Back into the warm press to rise again for 30 mins. God it takes so long!
Finished off my beurre blanc by heating and adding cream & butter (lots of butter). I later over heated it while trying to keep it warm, so it split and I had to go through a whole other process to bring it back again, apparently a good mistake to make because now I know how to fix it.
Then cooked my scallops & plated up for my teacher to taste. Apparently my jelly was excellent and I got scored a 6* - Im presuming the star is gona give me bonus points when it comes to exam time! Which, by the way is in 2 weeks, eek!
The bread went into the oven before I went for my lunch & then I forgot to go back & check it so it was a little over done. Another good day at the office!!! I dont care tho, I love it!
Oh & to top it all off I didnt have my memory card in my camera properly so all the pics of my lovely colourful jelly didnt save. I did bring some of my bread rolls home so this was the best I could do.

I know the difference between these & blaas but Im not gona tell you on this - its a secret!! I must try make them tho!
