Week 11, Friday

Friday was one of those "should have stayed in bed" days. I dont know what happens to me but some days I just seem to get everything wrong. Also my parents were coming for lunch and I wanted to show them what I made & finish on time to have lunch with them - nope, not possible!

First I rolled out the pastry for croissants that I had made on Thursday. Cut them, rolled them into shape & left them to rise. This should take around 40 mins. 2 hours later and they were still the same size so we moved them to the warming cupboard to speed things up. Checked them later and the butter was just after melting out of the pastry and they were still the same size - there was no way back at this stage so had to throw them in the hens bucket.

While that drama was unfolding I busied myself making a French Chocolate Cake. I over melted my chocolate & rum so it split, had to bring it back by adding cream but this was fine. Cake in the oven for 19 mins - perfect.

Next I moved on to Crispy Chicken Sandwich - this is basically chicken breasts split down the middle, filled with mustard, cheese, streaky bacon & chopped parsley then folded back up and coated in flour, egg & crumb. I fried this off to make it crispy then finished it off in the oven to make sure its cooked through.

While making my chocolate icing for the cake I forgot about my chicken and it was over done. Then my icing was too thin to spread & pipe on to cake so I put it in the fridge and abandoned ship to have lunch with my parents.

After lunch I came back to ice the cake but it was too solid at that stage so I melted it in the microwave for a bit but it was then too soft again. Into the freezer for a bit which was good enough for me to spread the icing on the cake but it got solid again in the piping bag so couldnt pipe it, my teacher popped it into a warm oven for a second and then half of it was coming out liquidy and half still solid. At that stage we gave up and covered it in almond praline instead. What a bloody disaster.

Last day in the kitchen as normal tomorrow & then exams - wish me luck, it appears Ill need it!!

Enjoy your last week at Ballymaloe Christine....going to miss your blog. I was on the last 12 week course and loved it. Don't worry about the exams, you'll be fine I'm sure. The hardest thing about the final week is leaving Ballymaloe...I still miss it!!Best of luck to you.

Thanks for your well wishes!! I think you're right, the hardest part is leaving. Glad to have the exams over & done with but didnt want it to end either.

It has been great and inspiring to read your blog over the last couple of months.
I enjoy cooking myself enormously as well as baking and believe me when I say that making mistakes is normal, just yesterday attempt number one of a brownie birthday cake has landed in the bin. Attempt number two, however worked out brilliantly!!
