Halloumi fried with a squeeze of lemon, sliced red chilli, mint, spinach - topped with fresh pineapple and a drizzle of honey.
My homemade sweet-chilli hummus, rocket picked from my garden, green olives and sundried tomato. Cherry tomatoes, extra mature cheddar cheese, cos lettuce and honey roasted ham with salad cream.
All on freshly baked local Cork breads. I want to show a way to put a creative twist on a classic - even something as simple as the humble sandwich!

I recently left my job to pursue a lifelong ambition of running my own business where I serve healthy, locally sourced, creatively prepared food that puts smiles on peoples’ faces. I want the best training available and Ballymaloe is the obvious choice. With my strong work ethic and determination, this would be a winning combination.I thoroughly believe that food should be fun and enjoyable. It offers an outlet to reflect my creativity and express my love for food.

With sandwich fillings like these you could be the next face of O'Briens!! Sorry Rachel! Having spent the three most blissful months of my life at the cookery school, a few years ago, I can honestly attest to the training and food expposure you'll get there Colm.Tim will love your enthusiasm in the glasshouses,you'll have rocket and more, in abundance, to work with. Go for it!!!
