Cooking is a great passion of mine and what I like best is experimenting with new dishes. From rabbit and duck to crab and lobster, I love trying to put new twists on dishes each time I cook them. With fishing being my day job I often get my hands on fresh fish. I admit that seafood is one of my favourite foods! The chance of someday becoming a professional chef and starting this journey at Ballymaloe would be a dream come true for me.

This is one of my favourite seafood dishes. The hake, caught locally off the Wexford coast, was pan fried in butter, and served on a bed of creamy mashed potatoes, grown in my own garden. The asparagus was steamed and the cherry tomatoes used as a garnish. The sauce is a lime butter, the butter was melted and lime juice added. Fresh parsley was chopped and added to the sauce. I believe that using fresh, local produce gives great taste and flavour.
