I've been baking since I was old enough to hold a whisk! My family and friends are usually the ones that eat the finished products but there's only so much cake one can eat! A few mates have allergies (gluten, lactose, etc) and I can't leave them out so now I'm experimenting with the ingredients! I want to make scrumptious cakes, bakes and treats available to everyone...regardless of allergies. And I'm pretty sure I could learn all the tricks of the trade with help from those at Ballymaloe!

My cupcakes are an altered version of my original cupcake recipe. They're light, fluffy and chocolatey with just a hint of hazelnut. The lashings of icing that coat the top is like chocolate icecream it's that creamy! And all topped off with a crunchy, roasted hazelnut. It's like a ferrero roche but Foo style! Nom nom nom!
