I don't regret choosing environmental science as the area to qualify myself in, but if I found myself back in my leaving cert class (shudder) I would chose a culinary path. I have always loved eating food and it wasn't until my early twenties that I started to enjoy cooking it. It is my favourite thing to do and now that I am unemployed perhaps this could be an opportunity for me to retrain, so hopefully you want to try some of my Drunken Crayfish Soup.
You have 500 characters to tell us about your dish: 
The first step in making this soup is to have a Swedish style crayfish party! The whole crayfish are cooked in a broth of beer, salt, sugar and crown dill including stalks. The shells are saved and used to make the stock along with carrot, leek, shallots, red chilli and tomato puree . This is simmered over many hours. The strained stock is then simmered with shellfish fond and white wine. At the end cream and cognac are added and the soup is served over the white and brown crayfish meat.
