I have been blogging about food for five years on www.valskitchen.com where i upload recipes and photos that I take of dishes that I make and create. I've been feeding my two sons with the best food I can find locally and we also grow our own organic veggies here at home in our yard and on the flat roof of our terraced house. My dream is to teach more people how easy it is to grow and cook our own food. The Ballymaloe course would equip me with the skills I need to work in this area.
You have 500 characters to tell us about your dish:
I invented this dish; Bacon and Cabbage Risotto during an argument with an Italian who claimed that there were no proper signature Irish dishes. I said that Bacon and Cabbage was one and he scoffed, saying there was no way that it could be made appetising for a wider audience. The result is this, a tasty, luxurious take on an Irish favourite. Simple ingredients of rice, onions, garlic, bacon rashers and your favourite cabbage combine with some Desmond cheese to make a new European 'classic'.

I have seen people try to make the bacon and cabbage dish and fail miserably but this is a great idea. Best of luck and it looks absolutely yummy...
